BARNCLIFFE BLUE - 200g Wedge
This is Jons personal recommendation on the cheese front, such a depth of flavour and incredible texture, perfect on some oatmeal biscuits with a glass of port in front of the fire!
Barncliffe cheeses are made in small batches by hand by Ruth Baker, in her dairy in Shelley, just 2.5 miles from our farm. All Barncliffe cheeses are vegetarian, and are made using pasteurised milk, which comes from a herd of Meuse-Rhine-Issel cows that graze just half a mile away from the dairy. Ruth collects their milk in churns straight from the farm each morning.
BARNCLIFFE BLUE has a Buttery texture, sharp and bright on the palate with notes of liquorice and pepper. Smooth, salty paste beneath a velvety blue mould rind. Surprisingly subtle blue flavour which develops with age, moving from fresh salty tastes when the cheese is young, to a spicier piquant complexity when ripe. At 2 weeks from its use-by date, Barncliffe Blue will have a yielding texture and deliciously mellow taste.
