We use cream from a very generous herd of Meuse-Rhine-Issel cows just a few miles away in Shelley. \u003c\/p\u003e\n\u003cp\u003eIt’s rich and incredibly tasty, which makes for a tremendous finished cheese, full of fresh floral dairy flavour and with an outstanding silky-smooth creamy texture. It’s a million miles away from the commercial alternatives, in terms of taste and texture. We add only an organic starter culture before letting the cheese set very lightly. The cheese is stirred religiously at set intervals for a whole day. After straining, it’s ready to spoon into tubs and it’s ready to use.\u003c\/p\u003e\n\u003cp\u003eOur mascarpone is so incredibly versatile. At its simplest, it’s incredible just spread over toast or crackers, with a little black pepper, but it can do so much more. It can be used in any number of quiches and tarts. It’s superb when stirred into freshly-cooked pasta, creating a smooth and silky sauce. It will add a totally new dimension to any tomato-based sauce, too. It makes a great alternative to a tomato base on a home-baked pizza, too. Try a 'pizza bianca' for a change – our mascarpone pairs with woodland mushrooms especially well, in fact there’s a recipe available now on our website to make it easy for you. It can be used in baking - in cheesecakes especially - and we can attest to how brilliant it is in a classic tiramisu.
