Barncliffe cheeses are made in small batches by hand by Ruth Baker, in her dairy in Shelley.

All Barncliffe cheeses are vegetarian, and are made using pasteurised milk, which comes from a herd of Meuse-Rhine-Issel cows that graze just half a mile away from the dairy. Ruth collects their milk in churns straight from the farm each morning.

Barncliffe Truffled is made by layering Barncliffe Mascarpone and chopped summer truffle within a ripe Barncliffe Brie, to give this indulgent cheese its deeply flavoursome character. Earthy, mushroomy and sometimes sharper garlic flavours combine with the creamy Brie paste, resulting in a complex and intense cheese with a lasting finish.
