All of the charcuterie made by our friends up in Todmorden is Artisan – that simply means everything is made by hand with the added attention to detail that you would expect from a high quality product. SJ and Nat are true pioneers of the regenerative farming movement, every decision they make reflects their boundless passion to provide the best environment for their pigs to enjoy and in return they are rewarded with the very best quality produce.
This selection has four complementary salumis to choose from. Two are mild in taste (Air Dried Ham and Lomo) and two have a more intense flavour (Culatello & Coppa). Ideal as a starter plate for a dinner party or as a Tapas plate amongst friends. Add some fresh Sourdough, some juicy olives, a fine cheese and a splendid bottle of wine and you are all set for a glorious culinary treat with Porcus salumi at its centre!

At Porcus they look after over 120 pigs at any one time – all free range, truly outdoor living, native breeds. They breath fresh air and walk on real ground, the ground they call our farm in the Pennines. If they are under the weather they go the extra mile to care for them. That extra care is stronger than any drugs. There is no need to blanket medicate like the industrial scale pig units do – their animals don’t live on top of each other in dark cramped barns – they live in open spaces, eat good varied food and are slow grown to allow the development of that fantastic flavour accredited to best reared meat that you have come to expect from your farmers.
